The sweet taste of success…I mean, vanilla

The sugar-free, gluten-free coconut flour cupcakes (cream cheese and orange frosting) were a success – small, dense, flavorful, and moist. To make them, I modified about 3 recipes I found on the internet. I wonder if they’d fluff up more if I used baking powder instead of baking soda (I don’t think there was anything acidic in the batter, so maybe the baking soda didn’t live up to its leavening potential?), but I’m afraid that would cause them to be dry. If there’s one thing I can’t stand, it’s a dry cupcake.

And, you know, man’s inhumanity to man and stuff.
